1 pie crust
2 ripe summer tomatoes
1/2 cup freshly grated parmesan cheese
1/2 cup mayonnaise
Slice the tomatoes in 1/4 inch thick slices and drain in a colander overnight.Discard juice. Preheat the oven to 350 degrees. Arrange the tomato slices in the pie crust. Combine the mayonnaise, cheese and salt and pepper and spread over the tomatoes, covering it to the edges. Bake for 20-25 minutes until bubbly.
